Peanut Sauce is a simple and amazingly tasty condiment that is smooth, sweet, savory, and pairs perfectly with many dishes. All you need is a handful of simple ingredients like peanut butter, coconut milk, soy sauce, rice vinegar, lime juice, garlic, ginger, pinch of sugar and about 5 minutes of your time!
Coconut milk note: when you first open the can of unsweetened coconut milk, it will be separated into solids on top and liquids below. Make sure to take everything out of the can and whisk it well before scooping out the amount needed.
Combine all of the ingredients in a medium sauce pot and start to whisk together slowly over medium to medium-low heat. Whisk until smooth.
Keep stirring slowly as you heat up the sauce just until it starts to simmer. As soon as it begins to simmer (as first bubbles appear), take off heat and serve.

Gluten Free Option - This sauce can easily be made gluten free by swapping out the low sodium soy sauce for gluten free soy sauce, or tamari, or even coconut aminos! In some stores, you can even spot gluten free soy sauce on shelves. Just be sure to check the labels! Many people don’t realize that there’s wheat in soy sauce, which disqualifies it from being part of a gluten free diet.
